These "roasted" beets are a snap to prepare with the slow cooker. The beets are wrapped in foil with a little olive oil, then they're slow cooked for about 3 hours, until tender. Using the slow cooker instead of the oven will help keep the house a little cooler, a big bonus during the warmer summer months.
