This Corned Beef and Spinach Strata is a great brunch or breakfast casserole that's easily made the night before. Just pop it in the oven in the morning, slice some fresh tomatoes and some fruit to accompany the casserole, pour the juice and coffee, and breakfast or brunch is served. Feel free to make this breakfast or brunch dish with ham or browned sausage instead of the cooked corned beef.

Delicious corned beef is boiled with spices, and then the cabbage and other vegetables are added and cooked. Just before serving time, the corned beef is coated with a brown sugar and mustard glaze and baked for about 10 minutes.
