Roasted Pumpkin Seeds

Save those pumpkin seeds! Crunchy toasted or roasted pumpkin seeds, plain and salted or seasoned with spices, are such a tasty treat. Here are several recipes for oven roasted pumpkin seeds and skillet toasted pumpkin seeds, great to use for snacks, or use them to top a casserole or salad.

Roasted and Toasted Pumpkin Seeds
Double or triple these roasted pumpkin seed recipes, depending on how many pumpkins you have. One medium to large pumpkin will yield about 1 cup of seeds, and 1 smaller pie pumpkin will yield about the same amount. Use roasted pumpkin seeds to top salads, sprinkle over a chicken dish or casserole, or serve as a snack.
