Chicken Salad With Apples

Serve this delicious chicken salad in ciabatta bread as a sandwich, or serve in lettuce leaves for a lighter luncheon. Light mayonnaise may be used in this salad. Walnuts or pecans add some crunch, but you can leave them out if you'd like.
