I love the subject of Southern Food and more so Cajun food. When I read your re-invention of Gravy and Bread Pudding I was really disappointed. Both of those items are true Southern but definitely not Cajun. Discussions regarding Cajun truely need to center around dishes like etoufee, jambalaya, and Cajun Gumbo.
Would love to see something regarding this.
