Roasted & Toasted Pumpkin Seeds

Save those pumpkin seeds! Crunchy toasted or roasted pumpkin seeds, plain and salted or seasoned with spices, are such a tasty treat. Here are several recipes for oven roasted pumpkin seeds and skillet toasted pumpkin seeds, great to use for snacks, or use them to top a casserole or salad.

Double or triple these pumpkin seed recipes, depending on how many pumpkins you have. One medium to large pumpkin will yield about 1 cup of seeds, and 1 smaller pie pumpkin will yield about the same amount. Use roasted pumpkin seeds to top salads, sprinkle over a chicken dish or casserole, or serve as a snack.
