I have never found a recipe that tells one exactly how much shortening or oil should be used to fry chicken. Some receipes do state that 2 inches should be left at the top of the pan. However, that does not tell me the amount of oil or shortening to use. For example, if I am frying a chicken breast in an 11″ pan, do I need oil to the depth of 3″ – do I need the oil to completely cover the chicken? cover half the chicken? Should I be able to push down on the chicken and it be completely covered?
