If you're looking for a lighter burger, these chicken burgers are an excellent alternative. They are made flavorful and juicy with chicken thigh meat and a variety of seasonings like fresh cilantro, garlic, and Cajun spice. As this recipe calls for boneless chicken thighs, you need to grind the meat yourself in either a meat grinder or food processor. You can also use a combination of cilantro and parsley in these burgers, or use all cilantro or all parsley if you prefer one herb over the other.

Serve these moist, well-seasoned chicken burgers on a soft bun with sliced tomatoes, pickles, and lettuce, along with a spicy sriracha mayonnaise or chipotle mayonnaise.

Ingredients

  • For the Chicken Burgers:
  • 2 to 3 teaspoons vegetable oil
  • 1/3 cup finely chopped onion
  • 2 medium cloves garlic (finely minced)
  • 1 to 1 1/4 pounds boneless chicken thighs
  • 1 cup loosely packed cilantro or parsley, or a combination
  • 1 tablespoon freshly squeezed lime juice
  • 1/2 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup fine dry breadcrumbs
  • 1 egg white
  • For Burger Assembly:
  • 6 to 8 hamburger rolls (toasted)
  • Burger toppings such as lettuce, tomato, and onion
  • Condiments such as ketchup, mayonnaise, and mustard

Steps to Make It

  1. Gather the ingredients.

  2. Preheat the oven to 400 F. Line a baking sheet with aluminum foil or spray with nonstick baking spray.

  3. In a small skillet, heat the oil over medium heat. Add the minced onion and cook, stirring, until tender. Add the garlic and cook, stirring, for another 1 to 2 minutes. Remove from the heat and set aside.

  4. Cut the chicken into chunks, discarding excess fat. Grind with a meat grinder or mince finely in the food processor. Add the herb, lime juice, seasonings, breadcrumbs, and the onion and garlic mixture. Mix until combined.

  5. Chop the cilantro or parsley finely and mix into the chicken mixture.

  6. Shape the chicken mixture into patties about 3 to 4 ounces each and place on the baking sheet.

  7. Bake for about 20 minutes, or until cooked through.

  8. Serve these flavorful chicken burgers on split toasted hamburger rolls with your favorite burger toppings.
