Here's How:
- In a heavy 1-quart saucepan, melt 8 ounces of butter over low heat.
- Simmer for 2 to 3 minutes, or until it has just about stopped crackling.
- Remove from heat and let stand for 10 minutes. Milk solids will settle to the bottom.
- Strain the clear liquid into a container.
- Keep for up to 1 month in the refrigerator.
