The Potato Salad

A variety of recipes for a summer essential

Potato salad has been a popular American dish since the mid nineteenth century. Most potato salad recipes combine cooked potatoes, chopped onion and other vegetables, sometimes eggs, and some type of salad dressing or mayonnaise. There are probably as many distinct potato salad recipes as there are cooks!

We all have our favorite potato salad, but it's fun to try something a little different. If you just want to spice your regular recipe up a little, try adding different chopped vegetables, top with sliced onions and tomatoes, or serve your favorite potato salad on a bed of crisp lettuce and sliced tomatoes. Some vegetables that are especially tasty in potato salad are sliced or chopped cucumber, tomatoes, celery, chopped onion, sliced green onion, sweet red, yellow, orange, or green bell pepper, and English peas.
