Salads are perfect for summertime meals and cook-outs. Adding or substituting vegetables works well for most salads, and the dressing can usually be sweetened, soured, and seasoned to your taste. Whether you're entertaining or not, you might want to dress up your salad with garnishes. Even the simplest toppings, such as sliced cherry tomatoes, sliced hard-boiled egg, or pepper and onion ring slices can make a plain potato salad look like a work of art. If you don't have time to make a salad from scratch, improve on your favorite deli potato salad by adding chopped sweet pickles, red or green peppers, cucumbers, hard cooked eggs, cheese, or herbs such as dill or parsley. To turn a vegetable or pasta salad into a main dish, add seafood, meat, chicken, or beans. Serve a pasta or main dish salad atop a bed of lettuce, sliced avocado, or sliced melon.
