Delicious steak cooked for salads and sandwiches

Is steak a little high for your budget? Grill or pan sear a 1 to 1 1/2 pound steak, slice it very thin, then use it in salads or sandwiches. You'll probably double your servings per pound of steak. Try the following technique next time you cook steaks indoors, and take a look at some of the recipes for steak sandwiches, marinades and salads listed on the next page.

Next to grilling, my favorite way to cook a steak is in a heavy cast iron skillet or cast iron grilling pan.

  • Season both sides of a 1 1/2-inch-thick steak with salt and pepper.

  • Heat the skillet in a 475° oven then place it on a surface unit over high heat. (Be careful, that skillet is very hot!)

  • Pan sear the steak for about 45 seconds on each side.

  • Put the pan back in the hot oven. Time it for 5 to 10 minutes, depending on how well-done you like it and thickness.

  • Let the steak rest for 5 to 10 minutes before slicing.
