Strawberry Shortcake

D. Rattray
Strawberry shortcake is one of America's favorite desserts. The name derives from being made "short," a word dating back to the fifteenth century which basically means crisp from the use of fat. In England, the word shortcake is synonymous with the Scottish shortbread, a crisp and butter-rich cookie-like pastry.

In America, shortcake means a rich pastry enclosing fruits, and it became very popular in the mid-1800s. There are also many modern variations using pound cake, angel food cake, or sponge cake, but the traditional shortcake is usually made with a sweetened biscuit pastry, plenty of sliced strawberries, and a generous dollop of whipped cream. Below, you'll find several recipes for shortcake and a few other strawberry desserts.
