Sweet Potato Pudding Recipe

Beaten egg whites make this sweet potato pudding recipe lighter.

• 4 egg whites, beaten until stiff peaks form
• 1 cup cooked mashed sweet potatoes
• 1/4 cup brown sugar, firmly packed
• 1/4 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• 1/2 teaspoon finely grated orange peel
• 1 can (12 ounces) evaporated milk, low fat or skim

Combine egg whites with mashed sweet potatoes, brown sugar, cinnamon, nutmeg, and orange peel. Stir in milk. Butter a 1 to 1 1/2-quart baking dish. Pour mixture into the baking dish. Bake at 325° for 1 hour. Serve warm.
