Crockpot Ham and Bean Soup

This is a recipe for ham and bean soup with navy beans, carrots, onion and peas and garlic.

Ingredients:

  • 1 pound dried navy soaked overnight and simmered for 30 minutes, drained
  • 1 hot pepper
  • 1 carrot, sliced
  • salt and pepper
  • 4 cups water
  • 1 ham butt (2 to 3 pounds)
  • 1 onion, sliced
  • 2 garlic cloves
  • 1 green pepper. diced
  • 1 green or red bell pepper, chopped
  • 2 cups shredded cabbage

Preparation:

Drain beans. Place all ingredients except green pepper and cabbage in slow cooker. Cover and cook on LOW for 7 hours. Turn to high and remove ham. Add green pepper and cabbage. Cook for 2 hours longer on High or until vegetables are tender. Serves 6 to 8.
