Potato Sauerkraut Soup

Ingredients:

  • 4 cups chicken broth
  • 1 (10 3/4 oz.) can condensed cream of mushroom soup
  • 1 (16 oz.) can sauerkraut, rinsed & drained
  • 8 oz. fresh mushrooms, sliced
  • 2 to 3 medium potatoes, cubed
  • 2 medium carrots, chopped
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 3/4 pound smoked sausage (Polish, smoked, or turkey, etc.)
  • 1/2 cup chopped chicken
  • 2 tablespoon vinegar
  • 2 teaspoon dried dill weed
  • 1/2 teaspoon pepper
  • 2 slices bacon, crisp, drained & crumbled

Preparation:

In a 3 1/2 to 5-quart Crock Pot, combine all ingredients except bacon. Cover and cook on low for 9 to 12 hours or until vegetables are tender. Skim off fat before serving. Sprinkle each serving with crumbled bacon, if desired.
Makes about 6 servings.
