Ingredients

  • 2 tablespoons dried parsley

  • 1 tablespoon dried oregano

  • 1 tablespoon dried marjoram

  • 1 tablespoon dried thyme

  • 2 teaspoons dried rosemary

  • 1 teaspoon garlic salt

  • 1 teaspoon onion salt

  • 2 teaspoons celery salt

  • 2 teaspoons ground ginger

  • 1 teaspoon freshly ground black pepper

  • 1 teaspoon sage

  • 1 teaspoon paprika

Steps to Make It

  1. Combine all ingredients in a small bowl and blend well.

  2. Spoon mixture into a small airtight container and label as Chicken Coating Mix.

  3. Store in a cool dry place and use within six months.

Oven-Fried Chicken

  • 1 1/2 teaspoons mix
  • 3/4 cup unbleached flour
  • 1/4 cup instant nonfat dry milk
  • 2 teaspoon sugar
  • 1/2 teaspoon salt
  • 2/3 cup of hot water
  • 2 tablespoons vegetable oil
  • fryer chicken (about 3 pounds)
  1. Combine ingredients in a medium bowl; mix until well blended and smooth.

  2. Preheat the oven to 425 F. Dip cut-up fryer chicken (about 3 pounds total weight) pieces in the batter.

  3. Place coated chicken pieces on a baking sheet and bake uncovered 40 to 50 minutes until chicken is golden brown and tender.
