Easy Icebox Fruitcake Recipe

An easy icebox fruitcake recipe from our forum.

INGREDIENTS:

  • 1 cup semisweet chocolate chips
  • 8 tablespoons (4 ounces) butter
  • 2 tablespoons milk
  • 1/2 cup sugar
  • 1/3 cup candied cherries
  • 2/3 cup sliced almonds
  • 2 tablespoons raisins
  • 1 pkg. (sleeve, or 1/3 of a standard box) graham crackers

PREPARATION:

Line cake pan with a large piece of foil. Press carefully into pan as not to tear the foil. Chop cherries. Break graham crackers into small pieces in a bowl, add cherries. In a saucepan, melt chocolate chips, butter, and milk; stir over low heat. Add raisins and almonds to the cracker mixture. Pour chocolate sauce over cracker mixture and mix well. Spoon mixture into cake pan and press more cherries on top. Cover cake with foil and press down firmly. Put cake in refrigerator to chill for 2 to 3 hours. Lift out of pan and remove foil. Store cake in refrigerator.
