Creamed Onions with Bread Crumb Topping

Ingredients:

  • 2 cans or jars (about 15 1/2 ounces each) small white onions, drain, reserve 1/2 cup liquid
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 1/4 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon mace or 1/8 to 1/4 teaspoon nutmeg
  • dash ground black pepper
  • 2 tablespoons dry bread crumbs

Preparation:

Melt the butter in a medium saucepan. Remove from the heat stir in flour until smooth; place over low heat. Gradually add reserved onion liquid and milk, stirring constantly. Bring to a boil, reduce heat, and simmer, stirring, for 1 minute. Add the onions, salt, mace and pepper. Heat thoroughly; transfer to a 1 quart-casserole. Sprinkle with bread crumbs and place under the broiler for about 2 minutes, until nicely browned.
