Potato Skins With Cheese

Potato skins are topped with shredded cheese and seasoning.

INGREDIENTS:

  • 3 large baking potatoes
  • 1/4 cup shredded Pepper Jack cheese
  • 1/3 cup shredded Mozzarella cheese
  • green onions
  • dillweed or other seasonings

PREPARATION:

Bake potatoes in oven or microwave. Combine shredded cheeses.

When potatoes are cool enough to handle, cut in halve length-wise. Scoop out most of the insides (leave enough shell to hold up) and save for another use. Divide cheese among potato halves and put under broiler or in microwave until cheese melts. Sprinkle with green onion tops and seasonings. Cut each skin in half again and serve. Serves 6
