Pork Stew Recipe with Tomatoes and Taco Seasoning

A crockpot pork stew with tomatoes, garlic, and taco seasoning.

INGREDIENTS:

  • 2 tbsp. vegetable oil
  • 1 lb boneless pork cut up into cubes
  • 1 large onion diced
  • 2 cloves garlic chopped
  • 1 packet taco seasoning
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 can diced tomatoes with green chiles
  • 1/2 cup beef broth
  • 1 can (12 ounces) corn
  • 1 can (15 ounces) pinto beans

PREPARATION:

Heat oil in skillet, brown pork and onion and garlic. Transfer to slow cooker or crockpot. Add remaining ingredients and cook on low for 4-6 hours. Serve with corn bread; garnish with sliced ripe olives and sour cream.
