PREPARATION:In a frying pan blond the onions and celery together with a little margarine this will bring out juices and will enhance the flavor. Combine all ingredients in the crockpot; cover and cook for 8 to 10 hours on low. Add water as needed. Freezes well. Note from Damedecoeur: I make a ton of this each fall as the tomatoes and green peppers are at the lowest prices, then I freeze it and eat delicious sauce all winter until the next season.
