Pork was once upon a time referred to as " the other white meat," but it's good to keep in mind that when you're looking at pork chops, they're a lean cut that can dry out very easily if they're not cooked properly. But this recipe is great for a few reasons. First, it ensures that the pork doesn't dry out by cooking it in liquid, and that liquid is in the form of a great shortcut: a can of chicken and rice soup, which also happens to add a ton of flavor without a lot of work.

This crockpot pork chops and rice recipe is easy to prepare and a mostly hands-off cooking process that you can start in the morning and it'll be ready for dinner the same day for a moist and flavorful dinner. It's not too much to accomplish even on a busy weekday. Serve it with a green salad or a side of green beans, and a crusty baguette.

Ingredients

  • 6 to 8 lean pork chops, about 1-inch thick

  • 1/2 cup all-purpose flour

  • 2 teaspoons salt

  • 1 1/2 teaspoons dry mustard

  • 1/2 teaspoon garlic powder

  • 1 (10-ounce) can chicken and wild rice soup

  • 2 tablespoons vegetable oil

Steps to Make It

  1. Gather the ingredients.

  2. Coat pork chops in the mixture of the flour, salt, dry mustard, and garlic powder.

  3. Brown in hot oil in the skillet, turning to brown on both sides.

  4. Place browned pork chops in the crock pot. Add chicken and rice soup.

  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

Tip

When you're cooking meat in a slow cooker, it's important to make sure the meat is completely submerged in liquid so that the meat does not dry out.

Variation

Turn this recipe into a gluten-free one by using a gluten-free flour blend. Just be sure that your chicken and rice soup is also completely gluten free, too.

Can You Overcook Pork Chops in the Crock Pot?

It's possible to overcook anything in a slow cooker. The best bet for this recipe is to cook the pork chops for 6 to 8 hours on low, or 3 to 4 hours on high, and check them for doneness at the lower end of the time frame. An instant read thermometer should read 160 F.

How to Store and Freeze Crock Pot Pork Chops

Pork chops will keep in the refrigerator for 3 to 4 days after they're cooked. Wrap them in foil or keep them in an airtight container. Reheat in a 350 F oven, wrapped, until hot, about 10 to 15 minutes. Cooked pork chops can also be frozen as long as they're wrapped in an airtight container or a zip-close freezer bag. Thaw in the refrigerator and reheat in a similar fashion.
