Crockpot Turkey Potato Soup

Use smoked turkey or ham in this crockpot potato soup recipes.

Ingredients:

  • 4 to 6 medium potatoes, diced
  • 1/2 cup chopped onion
  • 1 cup chopped smoked turkey breast or ham
  • 4 cups chicken broth
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • pepper to taste
  • 1 package (10 oz) frozen spinach, thawed and sqeezed dry
  • 1 cup shredded Cheddar cheese, optional

Preparation:

Combine first potatoes, onion, turkey or ham, chicken broth, mustard, and salt and pepper in slow cooker. Cover and cook on low 7 to 8 hours, until potatoes are tender. Add spinach and continue cooking on high for 15 to 20 minutes. Serve with shredded Cheddar cheese sprinkled on top, if desired.
Serves 6.
