Round Steak with Black Beans

Ingredients:

  • 1 can (approx. 10 ounces) diced tomatoes with green chiles *
  • 1 can (10 3/4 ounces) condensed cream of mushroom soup
  • 1 can black beans (15 to 16 ounces), drained
  • 1 large onion, diced
  • 1 green pepper, diced
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 1 1/2 to 2 lbs round steak, cut in serving size pieces, or stew beef

Preparation:

Combine all ingredients in a 4-quart or larger slow cooker; mix well. Cover and cook on LOW for 8 to 10 hours, or HIGH for about 4 to 5 hours. Serve with hot cooked rice or mashed potatoes.
Serves about 4 to 6.
*Alternative: 1 1/4 to 1 1/2 cups of chunky salsa, or a can (14 oz) of diced tomatoes and a can (4oz) of diced green chiles.
