INGREDIENTS:

  • 1 lb pinto beans
  • 3/4 to 1 lb cured ham(cut in small pieces)
  • 3/4 to 1 lb crawfish tails
  • 1 lg onion (diced)
  • 4 lg cloves of garlic, minced
  • 1 lb smoked sausage
  • Hot sauce to taste, or you can add dried pepper flakes or add pepper seasoning of your choice

PREPARATION:

Put beans, ham, and crawfish in crockpot with water to cover, and cook for 8 to 10 hours. In a Dutch oven, saute onion, garlic, and smoked sausage. When the onions are translucent add beans to pot along with 3/4 cup of rice and simmer until rice is tender.

Serve this with cornbread, sourdough, french, or bar-b-que bread and a cold glass of ice tea. If you put a spoon of this on your head, your tongue would slap your eyeballs out getting to it.
