Ingredients:
- 6 boneless, skinless chicken breast halves
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup flour
- 1/4 cup butter
- 1/2 cup finely chopped onion
- 2 medium cloves garlic, minced
- 1 bay leaf
- 1 teaspoon ginger root, grated
- 2/3 cup red wine
- 3 tablespoons brandy or dry sherry
- 1 1/2 to 2 cups chopped walnuts
- 2 tablespoons lemon juice, fresh
- 1 teaspoon grated orange peel
- 1 teaspoon grated lemon peel
Preparation:
Combine salt, pepper, and flour in bag or bowl; roll chicken in mixture to coat. Melt butter in heavy skillet and brown chicken. Transfer chicken to slow cooker. To skillet add onion, garlic, ginger and bay leaf. Saute until onions are tender. Add wine, brandy, and walnuts. Mix well. Add lemon juice, orange peel, and lemon peel. Stir and cook 5 minutes to blend flavors. Pour over chicken. Cover and cook on low 5 to 7 hrs.Serves 4 to 6.
