Ingredients:
- 1 pound very lean ground beef
- 1/2 pound ground breakfast sausage, mild
- 1 onion, chopped
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 can sliced mushrooms
- 1 teaspoon salt, or to taste
- 1/2 teaspoon nutmeg
- 1 package (10oz) frozen spinach, thawed and squeezed to remove as much water as possible
- 3 tablespoons flour
- 6 eggs, beaten
- 3/4 cup milk, scalded
- 1/2 cup shredded cheddar cheese
Preparation:
In a skillet, lightly brown meats and onion in butter; drain well and place meat mixture in a well-greased slow cooker. Add minced garlic, sliced mushrooms, salt, nutmeg, spinach, and flour; stir gently to blend. Beat eggs and milk together; pour over meat mixture. Stir well; cover and cook on LOW for 7 to 9 hours, or until set. Sprinkle with shredded cheese 5 minutes before serving.Serves 6.
