Pork chops and apples complement each other nicely and are the perfect combination for a fall or winter meal. The aroma of apples and pork wafts through the kitchen while this food is cooking creating a wonderful atmosphere of anticipation for eating this delicious dish.  This crock pot version adds raisins and a tangy brown sugar sauce to the mixture. It's a very easy recipe with only six ingredients plus salt, to prepare. You can even use pork chops that are still frozen or slightly thawed as the meat is seared before putting in the slow cooker. 

This recipe uses Granny Smith apples to get that tangy, tart taste, but you can use another variety of apple, such as Macintosh, Honeycrisp, or Pippin. Or mix it up and use two varieties.

Apples and raisins bring out the flavor of the pork chops in this slow cooker recipe but feel free to replace the raisins with dried cranberries. Enjoy this pork dish with potatoes or rice for an excellent family dinner.

Ingredients

  • 6 pork chops, about 1-inch thick

  • 2 tablespoons vegetable oil

  • Salt, to taste

  • 6 tart apples, such as Granny Smith, cored and thickly sliced

  • 1/4 cup currants, or raisins, optional

  • 1 tablespoon lemon juice

  • 1/4 cup brown sugar

Steps to Make It

  2. Trim the pork chops and discard any excess fat.

  3. Heat the oil in a large skillet over medium-high heat. Add the pork chops to the skillet and sear, turning to brown both sides.

  4. Sprinkle the pork chops with salt and place them in the slow cooker.

  5. Combine remaining ingredients—apple slices, currants or raisins, lemon juice, and brown sugar—and pour over the pork chops.

  6. Cover and cook on low for 6 to 8 hours, or on high for about 3 to 4 hours. Serve and enjoy.

Tip

  • Liquids can become watery over the long cooking time in a slow cooker. To reduce the liquids to use as a sauce, strain them into a saucepan. Bring the liquids to a boil over medium-high heat. Reduce the heat to medium-low and continue cooking until the liquids are reduced and the flavors are concentrated.
  • Bone-in pork chops tend to be more tender and juicy as the bone helps to keep the moisture while cooking.
  • The currants or raisins are optional and can be used or omitted, but they add more texture, color, and flavor to the dish. If you don't use them, consider other variations in their place.


Recipe Variations

  • Replace the currants or raisins with dried cranberries or dried cherries.
  • Add a dash of ground cinnamon on the top before cooking.

How to Store

If there are any leftovers store them in an airtight container and put in the fridge. They will keep for four to five days.
