This slow cooker casserole is a flavorful side dish that goes well with a baked ham dinner or roasted pork or chops.
You can cook this pineapple casserole in an 8-inch souffle baking dish, which fits inside large oval slow cookers. Or you can use a 3- to 3 1/2-inch buttered slow cooker as well.
Ingredients

1 (20-ounce) can crushed pineapple, undrained

1/4 cup evaporated milk

1 cup packaged cornbread dressing crumbs

3/4 cup sugar

1/4 cup butter or margarine, melted

3 large eggs, beaten
Steps to Make It

Lightly butter the bottom and sides of a 3 1/2-quart slow cooker (or use a baking dish that fits in a larger slow cooker).

Combine all ingredients; blend well. Pour the pineapple mixture into the slow cooker.

Cover and cook on high 2 1/2 to 3 hours.

Serve with baked ham, roast pork or chops, or smoked pork shoulder.

- This casserole may also be made with lightly seasoned or unseasoned toasted bread cubes.
