Ingredients:
- 1 tablespoon vegetable oil
- 4 loin lamb chops
- 2 tablespoons all-purpose flour
- 2/3 cup beef broth or chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 clove of garlic, minced
- 1 scant tablespoon tomato paste
- 4 ribs celery, thinly sliced
- 1 tsp salt
- freshly ground pepper to taste
- chopped parsley
Preparation:
Heat oil in pan. Coat lamb chops with flour and brown quickly. Transfer chops to slow cooker. Add remaining ingredients to pan and bring to a boil. Pour over lamb and cook on HIGH for 30 minutes, then on LOW for 5-7 hours. Taste to check seasoning and sprinkle with plenty of chopped parsley.Serves 4.
