How to Store Eggplant

Eggplant bruises easily and is sensitive to temperature changes. It should be handled with care.

Here's How:
  1. If the eggplant is wrapped in plastic, it should be removed.
  2. Place the eggplant in a perforated plastic bag.
  3. Store in the refrigerator.
  4. Use within 1 week.
  5. To freeze eggplant, blanch or steam first. It will keep for 6 to 8 months in the freezer.
Tips:
  1. Peel large, tougher eggplants before using in a recipe.
  2. Eggplant absorbs oil like a sponge; dip in beaten egg and flour or crumbs when frying.
  3. For added flavor, lightly brush with olive oil and sprinkle with herbs before baking.
