Ingredients:
- 1 frying chicken, about 2 1/2 pounds, cut in half, or 2 1/2 pounds chicken pieces
- salt
- 2 tablespoons butter
- 1 1/2 cups sherry
- 2 tablespoons bacon grease
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons grated onions
- 1 teaspoon salt
Preparation:
Sprinkle chicken with salt; place in a container, cut side up. Bring salt, butter, sherry, bacon drippings, olive oil, and lemon juice to a boil. Cool. Pour cooled mixture over salted chicken; soak for several hours or overnight. Remove chicken to a broiler pan and pour marinade into a saucepan. Roast chicken at 350° for 20 minutes, browning lightly. Meanwhile, boil the marinade for a few minutes. Finish chicken under broiler, basting frequently with the boiled marinade. Chicken is done when juices run clear. Serves 4.
