PREPARATION:Cook rice according to package directions and cool completely. Cook peas
according to package directions; drain and cool completely. In a large
bowl toss together 3 cups of the cooked rice, the cooked peas, chicken, celery, mayonnaise, and salt and pepper, to taste. Serve on salad greens or a bed or romaine lettuce, and garnish with sliced tomatoes. Makes 6 servings.
