Rice Salad with Peas and Chicken

This rice salad recipe includes peas, chicken, celery, mayonnaise, and tomatoes.

INGREDIENTS:

  • 1 cup long-grain rice
  • 10 oz pkg tiny green peas
  • 1 cup diced (3/4 inch) chicken
  • 1/4 cup diced (3/4 inch) celery
  • 1/3 cup mayonnaise
  • salt, to taste
  • pepper, to taste
  • romaine lettuce or salad greens
  • sliced tomatoes

PREPARATION:

Cook rice according to package directions and cool completely. Cook peas according to package directions; drain and cool completely. In a large bowl toss together 3 cups of the cooked rice, the cooked peas, chicken, celery, mayonnaise, and salt and pepper, to taste. Serve on salad greens or a bed or romaine lettuce, and garnish with sliced tomatoes.
Makes 6 servings.
