Shrimp Cakes

Shimp cakes are made with cracker crumbs, mustard, cream, and cooked shrimp.

INGREDIENTS:

  • 1/4 cup butter
  • 1/4 cup chopped onion
  • 3 tablespoons all-purpose flour
  • 1 teaspoon prepared mustard
  • 1 cup light cream
  • salt and pepper, to taste
  • 1 pound shelled cooked shrimp, chopped
  • cracker crumbs

  • Sauce:
  • 1 cup mayonnaise
  • 1/2 cup chopped ripe olives
  • 1 tablespoon fresh dill, minced
  • 1 tablespoon fresh lemon juice
