Pork Gumbo Recipe

A recipe for pork gumbo, made with cubed pork loin, beef broth, tomatoes, okra, and more.

Cook Time: 35 minutes

Ingredients:

  • 1 pound pork loin, cubed
  • 1 tablespoon margarine
  • 2 tablespoons flour
  • 1 cup beef broth or bouillon
  • 1 can stewed tomatoes, (15 oz)
  • 1 package frozen okra, sliced, (10 oz)
  • 1 package frozen succotash, (10 oz)
  • 1/2 to 1 teaspoon hot pepper sauce
  • 1 teaspoon black pepper
  • 1 bay leaf

Preparation:

Spray Dutch oven with cooking spray; heat over medium heat. When pan is hot, add pork cubes. Cook for about 4 to 5 minutes, or until browned on all sides. Remove pork and set aside.

Add margarine to Dutch oven; stir in flour. Cook and stir until roux is browned. Whisk in broth and remaining ingredients. Bring to a boil; reduce heat and simmer for 15 to 20 minutes. Remove bay leaf and serve.
Serves 4.
