Seafoam Frosting Recipe

Recipe for seafoam frosting, a boiled frosting made with egg whites and brown sugar.

Ingredients:

  • 1 egg white
  • 3/4 cup light brown sugar, firmly packed
  • 3 tablespoons water
  • 1 teaspoon light corn syrup
  • 1/2 teaspoon vanilla

Preparation:

Combine egg white, brown sugar, water and corn syrup in top of double boiler and mix thoroughly. Place over rapidly boiling water; beat constantly with mixer until mixture holds up in peaks (about 7 minutes). Remove from heat, add vanilla, and beat until cool and thick enough to spread.
Makes enough frosting to cover top and sides of two 8-inch layers.
