Colorful Chicken Salad

Recipe for a colorful chicken salad with peppers, hard-cooked eggs, cucumber and celery.

INGREDIENTS:

  • 4 cups diced cooked chicken
  • 3 hard-cooked eggs, chopped
  • 1/2 cup sliced cucumber
  • 1/2 cup diced celery
  • 1 tablespoon chopped pimiento
  • 1/4 cup diced sweet peppers, green, red, yellow or combination
  • 1 teaspoon salt
  • mayonnaise
  • parsley sprigs and cherry tomatoes, for garnish, optional

PREPARATION:

Mix first 7 ingredients together; moisten with mayonnaise, a little at a time, until desired consistency. Garnish with parsley sprigs and cherry tomatoes, if desired.
Serves 12
