Prep Time: 10 minutes
Ingredients:
- 2 1/4 cups chocolate sandwich cookie crumbs
- 1 cup pecans, toasted, finely chopped
- 1 1/2 cups confectioner's sugar, sifted & divided
- 1/3 cup coconut flakes
- 1/4 cup light corn syrup
- 1/4 cup strawberry preserves
Preparation:
Combine cookie crumbs, pecans, 3/4 cup powdered sugar, and coconut in a bowl. Stir sell. Add corn syrup and preserves; stir well.
Shape mixture into balls, using 1 tablespoon of mixture for each. Roll
balls in remaining 3/4 cup powdered sugar; roll again to coat well.
Store in an airtight container up to 4 days.
Makes 28 cookies.
