Ingredients:
- 2 pounds fresh spinach leaves, torn into bite-size pieces
- 3/4 cup peanuts, coarsely ground
- 2 tablespoons peanut oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- dash red pepper, optional
Preparation:
Cook spinach in enough water to cover. After 4 or 5 minutes, sprinkle in the peanuts & stir well. Continue cooking over medium heat for about 30 minutes, adding more water if necessary to prevent burning. Just before serving, drain and stir in the peanut oil, salt, black pepper, and red pepper.Serves 6.
