INGREDIENTS:

  • 1 1/2 pounds pork tenderloin, trimmed
  • 1/4 cup light brown sugar, packed
  • 1/4 cup orange marmalade
  • 1/4 cup beef broth
  • 1/4 cup red wine
  • 1/4 cup dried apricots, chopped
  • 1/4 cup raisins

PREPARATION:

Place tenderloin in a roasting pan. In a small saucepan, heat marmalade with brown sugar until sugar is dissolved; brush over pork. Add broth, wine, apricots and raisins to the roasting pan. Cover and bake at 350° for about 45 minutes, or until pork is no longer pink and a meat thermometer registers at least 150° in the center, basting frequently with pan juices. Remove from oven and let stand for 5 minutes. Slice and serve with the sauce and fruit spooned over top.
Serves 4 to 6.
