Noodle and Ham Casserole

INGREDIENTS:

  • 8 ounces wide egg noodles, about 4 to 5 cups
  • 3 tablespoons butter
  • 1/4 cup finely chopped onion
  • 2 eggs, beaten
  • 1/2 cup sour cream
  • 1 1/2 to 2 cups cooked diced ham
  • 1/4 teaspoon pepper
  • 1/4 cup buttered bread crumbs

PREPARATION:

Heat oven to 350°. Butter a 1-quart baking dish. Cook noodles in boiling salted water, following package directions; drain. In large skillet, melt butter. Add onion; cook, stirring frequently, until onion is tender. In large bowl, stir together the beaten eggs and sour cream. Stir in onion mixture, ham, and pepper. Stir in hot noodles; pour into prepared baking dish. Sprinkle bread crumbs over top; cover and bake 30 to 35 minutes or until hot and bubbly.
Serves 4.
