Grilled Catfish With Lemon Juice

Grilled whole catfish with lemon and butter and a little mustard. Add a tasty fruit salsa to serve along with the catfish. This peach salsa or fresh pineapple salsa would be fabulous.

Serve the catfish with hot boiled rice and grilled eggplant or steamed vegetables.

Ingredients

  • 6 (1- to 1 1/2-pound) whole catfish, cleaned

For the Basting Sauce:

  • 4 ounces (1/2 cup) unsalted butter, melted

  • 2/3 cup lemon juice

  • 1 dash Tabasco sauce

  • 1 teaspoon mustard

  • 2 tablespoons Worcestershire sauce

  • 1 teaspoon kosher salt

  • 1 teaspoon freshly ground black pepper

  • 1 teaspoon chili powder

Steps to Make It

  1. Whisk together basting sauce ingredients.

  2. Place catfish on well-oiled grill or grilling basket over medium coals.

  3. Grill, basting frequently for about 20 minutes; turn and continue grilling for about 15 minutes or until fish flakes easily with a fork.
