Ingredients:
- 4 pork chops
- salt and pepper, to taste
- 2 teaspoons vegetable oil
- 1 large onion, sliced
- 1/3 cup hot water
- 1/3 cup ketchup
- 1 medium green bell pepper, diced
- 3 cups canned lima beans, drained, reserve liquid
Preparation:
Season chops. Brown in oil with onion. Place lima beans, green pepper, and pork chops in layers in a casserole dish.
Add hot water to pan
drippings with ketchup and bring to a boil, stirring and scraping to loosen the browned bits. Pour liquid over casserole.
Add a little reserved bean liquid (or water) as needed during baking. Bake at 350° for about 1 hour and 20 minutes.
Pork Chop Casserole serves 4.
