Veal with Mushrooms

Baked veal steaks with mushrooms

  • 2 pounds veal steaks, about 3/4-inch thick
  • 1/2 cup red wine
  • 2 tablespoons white vinegar
  • 1/4 cup chopped onion
  • 1 large clove garlic, minced
  • 1 teaspoon dried oregano, crumbled
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1 teaspoon salt
  • 8 to 12 ounces sliced mushrooms
Cut veal into serving-size pieces and place in a non-reactive container. In a large measuring cup or small mixing bowl, combine wine, vinegar, onion, garlic, oregano and olive oil; pour over meat. Cover and let veal stand in marinade in refrigerator for at least 4 hours or overnight. Place veal in a shallow baking dish; pour marinade over and top with sliced mushrooms. Cover with foil and bake at 350° for 1 1/2 hours, or until veal is tender.
Serves 6.
