Braised Pork with Cranberries

Use Boston butt or pork shoulder in this recipe.

Ingredients:

  • 1 Boston butt, pork shoulder roast, about 5 pounds
  • 3/4 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can (about 15 ounces) whole berry cranberry sauce

Preparation:

Put Boston butt shoulder in a cooking pot just large enough to hold it; add water. Cook slowly until water has evaporated. Brown meat in fat left in pan. Pour off fat; sprinkle with salt and pepper. Add cranberry sauce. Cover and simmer for 3 to 4 hours, or until meat is tender. Check for dryness and a little more water, 2 to 3 tablespoons at a time, if necessary. Recipe for Boston butt serves 6.
