Glazed Smoked Shoulder

Smoked shoulder with orange and pineapple slices and a sweet glaze with sweet potatoes.

INGREDIENTS:

  • 1 smoked shoulder - smoked butt - about 3 pounds
  • water
  • 4 orange slices
  • 4 pineapple slices
  • 4 to 6 cooked and peeled sweet potatoes
  • 3 tablespoons light corn syrup
  • 3 tablespoons brown sugar

PREPARATION:

Cover pork with water. Simmer until pork is tender, about 50 minutes per pound or following package directions. Remove to large baking dish or roasting pan. Arrange orange and pineapple slices and sweet potatoes around pork. Drizzle meat and vegetables with a little corn syrup then sprinkle brown sugar over all. Bake at 400° for 25 minutes, until browned and glazed. Smoked shoulder serves 4.
