Cook Time: 25 minutes
Ingredients:
- 1 large onion, halved and sliced
- 3 tablespoons butter or margarine
- 1 pound cooked diced ham
- 2 pounds potatoes, cut in 1/2-inch cubes
- 1/2 teaspoon salt, or to taste
- 1/8 teaspoon pepper
- 1/2 teaspoon crumbled dried rosemary
- 1 tablespoon flour
- 1 cup beef broth or bouillon
- 1 to 2 cups frozen peas (about 10 ounces)
Preparation:
In a large skillet, sauté onion in the butter until lightly browned. Add ham; cook and stir for 3 minutes. Add potatoes; sprinkle with salt, pepper, rosemary and the flour. Stir. Add beef broth to skillet; bring to a boil. Reduce heat, cover, and simmer until potatoes are just tender, about 10 minutes. Add peas and simmer until peas are done, about 10 minutes longer.Ham recipe serves 4.
