Almond Meringue Cookies

INGREDIENTS:

  • 1 1/4 cups butter
  • 2 cups granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 eggs
  • 4 cups all-purpose flour
  • 1/3 teaspoon salt
  • .
  • Meringue Cookies Topping:
  • 3 egg whites
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 tablespoon ground cinnamon
  • 3/4 cup ground almonds

PREPARATION:

Meringue Cookies
Cream butter and sugar; add vanilla and almond extract; beat in eggs. Add sifted dry ingredients; mix well. Shape into 2 rolls about 2 inches in diameter. Wrap in wax paper and refrigerate for several hours. Cut into 1/8-inch slices and place on ungreased baking sheet. Spread cookies with meringue topping; bake at 375° for 8 to 10 minutes. Makes about 7 dozen meringue cookies.

Topping for Meringue Cookies:
Beat egg whites until foamy; add 1/4 teaspoon salt, 1/2 cup sugar, cinnamon, and ground almonds. Mix well and use for topping meringue cookies.
