Ingredients:
- 1 tablespoon Canola oil
- 2 cloves garlic, minced
- 1/2 cup chopped onion
- 2 ribs celery, chopped
- 2 medium carrots, chopped
- 8 ounces sliced mushrooms, about 2 - 2 1/2 cups
- 4 cups beef broth
- 1/4 cup barley
- 4 ounces stew beef, diced
Preparation:
In a large Dutch oven or saucepan, heat oil; sauté garlic, onion, celery, carrots and mushrooms for about 8 to 10 minutes, or until tender. Add beef broth, barley, and beef; cover, reduce heat and simmer barley soup for 45 to 55 minutes, or until barley is tender, stirring occasionally.Beef barley soup with vegetables serves 4.
